Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots peeled and diced
  • 2 potatoes peeled and diced
  • 1 bunch kale stems removed and leaves chopped
  • 6 cups vegetable broth
  • 1 can cannellini bean
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Method
 

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until translucent.
  2. Add the carrots and potatoes to the pot and cook for a few minutes until they start to soften.
  3. Pour in the vegetable broth, cannellini beans and bring to a simmer. Cook for about 15-20 minutes, or until the vegetables are tender.
  4. Add the chopped kale to the pot and cook for an additional 5 minutes, or until the kale is wilted.
  5. Stir in the dried thyme, and season with salt and pepper to taste.
  6. Serve the vegan kale soup hot and enjoy!
