- In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until translucent.
- Add the carrots and potatoes to the pot and cook for a few minutes until they start to soften.
- Pour in the vegetable broth, cannellini beans and bring to a simmer. Cook for about 15-20 minutes, or until the vegetables are tender.
- Add the chopped kale to the pot and cook for an additional 5 minutes, or until the kale is wilted.
- Stir in the dried thyme, and season with salt and pepper to taste.
- Serve the vegan kale soup hot and enjoy!
